From Switzerland to Tuscany: Johannes Davaz emigrated to Italy to grow wine in harmony with nature. The certified organic Chianti Classico has an elegant structure with multi-layered fruit aromas and racy tannins. It goes well with cheese, white meat and pasta.

Johannes and Kathrin Davaz's winery is located in the DOCG Chianti Classico region between Florence and Siena. Johannes comes from a family of Swiss winegrowers who have been making wine in the Bündner Herrschaft region since the 1970s. He later took over the Poggio als Sole winery in Tuscany, where he now lives and continues to write his own story. The winery comprises around 24 hectares of south-east to south-west facing vineyards and is in harmony with nature, as the vineyards are cultivated according to organic principles. All nine wines from Poggio al Sole are certified organic and vegan. The Chianti Classico is made from 90% Sangiovese grapes, with small proportions of Canaiolo and Merlot. The grapes are harvested by hand from the end of September to the beginning of October, fermentation takes place in steel tanks with a maceration period of 12 to 16 days. The wine is then matured in used barriques.
