In 1743 Jihei Kanoh started to produce sake, more than 100 years later the company "Hakutsuru" was officially founded. Today, she is also known for her plum wine in addition to sake. For the production of the "Plumwine Hakutsuru" one puts on the Japanese Ume plums, which are fermented by means of highly developed techniques and actually rather belong to the apricots. In Japan, the ume plums are usually cultivated in the northeast corner of the garden, as they are supposed to use the evil that comes from this direction. Its pale pink flowers are a symbol of spring and have been imported from China to Japan and other East Asian countries.
